Cocktails
Blended Whiskey. Elevated
This is the blend that started it all for Sabbatical. We set out to create an easy-drinking whiskey with character, to stock on our table at home or bring to the table with friends. We couldn’t find it, so we went on Sabbatical to develop our own. Years of work & experimentation led to a delicate layering of clean cut bourbon with distinctly rich cherrywood and peat smoked malt whiskeys for a blended whiskey unlike any other.
We designed seven custom recipes for the blend that we first distilled and barreled while on sabbatical at a partner facility as our home distillery was being built. After a long journey, this whiskey has come of age and we are now distilling the next generation of the blend on-site with estate-grown grains.
Inspired by Japanese blends, informed by American character and finished with California style, the Table Blend is uniquely smooth, yet complex. Enjoy in a refreshing highball, whiskey sour, over ice, or however you like. Most of all, enjoy this Sabbatical.
Sábado Gin
A modern take on an enduring classic, this New American style gin is delicately distilled with a bouquet of 13 unique botanicals to create a light and refreshing profile. Inspired by our California island location and a healthy sense of adventure, Sábado small batch gin blends fruit floral and spice notes for a smooth drinking experience. This gin is different. This is gin for the weekend.
The perfect base for a Negroni, Martini or our preferred take on the classic G&T, the Sábado sonic. Use in place of other gins, tequila, amaros or vodka for a clean yet nuanced drinking experience. This is gin, the way you wish gin tasted.

Dynamic offerings based on seasonal availability, we hand select the best fresh ingredients from our island and neighboring farms to create one of a kind farm fresh spirits. Small batches, limited releases, constant experimentation.
Seasonal: Limited runs. Fresh harvested ingredients. Once we run out, that’s it for the season!
