A very limited expression of our Straight American Single Malt Whiskey distilled from 100% malted barley and aged over 4 years in new American oak barrels then further matured in a French white oak cask that previously held Cognac. The followup release to our sold out debut expression is Sabbatical’s oldest Single Malt bottling to date with almost 5 years of aging in multiple casks. We took inspiration from a combination of whiskey making and aging styles that blends traditions from Scotland, America and France for a singular expression that’s handmade to sip, savor and enjoy the harmony of flavors.
An earthy malt base is balanced by notes of sweet vanilla oak and bright, silky cognac with a finish that coats the palate and begs for another sip. Batch #2 presents an impossibly soft profile rich with flavor and deceptively easy to drink at just over 90 proof.
